It is easy to forget that healthy water systems and hydrologies are essential to the production of Australia’s finest artisan cheeses. Learn how cheesemakers use moisture, humidity, temperature and living microbes to create cheese with amazing textures, flavours and aromas. Taste cheeses while learning their unique characteristics and those of the animals whose milk is used to create them. Discover how to use cheeses with other foods and beverages, learn what to expect from your retailer and how to choose and store cheese for the best taste and longevity.
