Breaking Down the Meat

Boutique butcher and deli, Hudson Meats, will host in-store demonstrations on the culinary art of butchery. Upholding the ethos of the local butcher, these classes will highlight the traditional techniques used to break down a “beast”.

Taking you behind the counter, butcher Micah Hewitt will discuss different techniques used for cut presentation and identification and share the essential knife skills used in the trade.

Exploring the unique characteristics of each cut of meat, guests will learn the difference between breeds, how the beast was raised and its journey to the butcher shop. Hewitt will explain each section of the beast; tips and tricks on how best to cook each cut and how environmental factors can affect the meat.

All this while you enjoy a glass or two of premium wine and delicious Hudson Meats antipasti.
