This sandwich is the ultimate. Feel free to add or subtract any elements because hey, it’s your sandwich.
We made this with challah bread from Babka which was equally, if not more, delicious. Get around it.
2 slices crusty sourdough bread or challah Butter, softened, for spreading 2 slices streaky bacon Large dollop onion jam Large dollop good quality mayonnaise 1 egg, poached
1/2 ripe hass avocado, flesh scooped out and cut into large chunks 1 tbsp chives, chopped 2 tbsp spring onion, 1/2 clove garlic, crushed Juice of half a lemon 2 chunks marinated Meredith Goat’s Fetta plus 1/2 tbsp of the oil 1 red chilli, finely chopped
Make your smashed avocado by mixing all ingredients together so well combined but the chunks of avocado still vaguely hold their shape. Set aside.
Fry bacon until crispy. While doing so, poach your egg.
Toast your bread and butter it, and then assemble your sandwich: spread with onion jam, mayonnaise, then place the bacon in top; then place spoonfuls of the smashed avocado, then the poached egg.
Season with salt and pepper to taste then place the top of the sandwich on. Press down so the yolk bursts and voila! Best breakfast sandwich ever. EAT UP.
