In recent years, bar-hoppers have been flocking northside to experience great bars close to the city and the surrounding suburbs, particularly in Fitzroy; but way back in 2000, a new and very different place called Polly opened up, setting the benchmark for future bars in the area with great service and high-end cocktails.

Recline on the plush velvet couches and sip slowly on your beverage surrounded by voluptuous rubenesque women adorning the walls in antique gilded frames. Order an absinthe fountain and watch as the liquid drips gently over the sugar cubes and the stresses of the day just melt away. Prefer a cocktail? You’re totally spoilt for choice as, since day one, the bar has been serving up serious drinks. This is why over fifteen years since its inception, Polly remains a Melbourne institution.

Pizza, tapas and bar snacks keep everyone happy, and the charcuterie board is brilliant with a bottle of wine to start the night. Once you’ve settled in, you’ll never want to leave – and why would you when the atmosphere is so special? If you feel like ending your experience here like a boss, order a cigar from the humidor, sit outside and disappear under a veil of smoke as you plan your next visit… because, regardless of how long it takes you, Polly will be there waiting just as she always has.
