It has been a big six months for Chef Chris Terlikar. After six months of nomad life, hosting sell out events under the Bluebonnet banner at The Beaufort, Grub Food Van and Forgotten Worlds, Terlikar has set down his roots and found a permanent home.
From August 7, Bluebonnet Barbecue will be located on the Hoddle Street end of Collingwood at 187 Johnston Street, in the building once home to ‘Ilk Bar’. Those who remember the previous tenants will be in for a shock, as Terlikar has completely renovated the 1886 heritage listed building and transformed the intimate space into a more social affair; decking it out with communal wooden tables and sharing trays.
Highlights of the seasonally changing menu include smoked pork belly, juniper rubbed venison short ribs and guindilla cornbread, in addition to the holy trinity of Texas BBQ (sausages, beef ribs, brisket). Not to mention the house-made barbecue sauce to top it all off.
Reservations can be made for parties of six or more, but the space is also available for private functions and catering Sunday to Wednesday.
